Tasting notes
Produced from two small bush vine blocks, this unique wine scored 94/100 from British Master of Wine Tim Atkin. Whole bunch press. No settling of the juice. 50% of spontaneous fermentation in stainless steel. Last 50% of fermentation was done 60% in 500ℓ“new” barrel, and 40% in a granite amphora. This means fermenting and ageing granite in granite. It is a subtle and sophisticated wine with whiffs of grapefruit and peaches enveloped by a flintiness.

Pair with Lobster; Poulet de bresse, Guinea Fowl, Hazelnut-crusted chicken.
